What a Waiter payslip looks like

A typical UK waiter payslip is paid weekly and shows a basic pay line at the top. Waiting staff typically earn basic at NMW plus tronc; expect a written tipping policy on file. The line items below depend on grade, shift pattern and contractual additions, but the structure usually mirrors HMRC's recommended payslip layout: a payments block, a deductions block, a year-to-date column, and a net pay summary.

Common employers in this occupation include Wagamama, PizzaExpress, Independent restaurants. Each employer runs payroll slightly differently, but the underlying PAYE computation against tax code 1257L and Class 1 National Insurance is identical across the UK (excluding Scotland for income tax). The biggest variability between two waiter payslips at the same gross will be in the additions block: Waiting staff usually show NMW basic plus PAYE-administered Tronc as a separate post-tax line. From October 2024 the Allocation of Tips Act mandates a written tipping policy.

Year-to-date columns are critical to verify on this role because the additions and salary sacrifice items change month to month. If your YTD gross divided by months elapsed in the tax year does not match your expected annual run-rate, that is the single best signal that something is mis-coded.

Tips, gratuities, service charges and troncs and waiter pay

You are the worker the tronc rules were written around, and usually the one whose table the tip was left on. Where the tronc runs on points, HMRC's own worked example gives a waiter one point and the head waiter three, so your share moves with the rule rather than with your section's takings. Because card tips reach the employer's account before they reach the tronc, the first condition for the National Insurance exemption cannot be met, and whether your tronc line carries NI comes down entirely to whether the employer keeps out of the allocation.

Deductions from wages, and the retail 10% cap and waiter pay

Section 17(3) settles the question and it is wider than the word retail suggests: a retail transaction is the sale or supply of goods or the supply of services. Putting food and drink in front of a customer is both, done directly with a member of the public, so table service falls inside limb (a) of section 17(2) whether or not the card machine ever reaches your hand. A walkout charged back to you is then a deficit in amounts received in connection with those transactions, and it is held to a tenth of that pay day's gross.
