What a Bar Staff payslip looks like

A typical UK bar staff payslip is paid weekly and shows a basic pay line at the top. Bar staff earn close to NMW with late-night premia; deductions for till shortages are heavily restricted. The line items below depend on grade, shift pattern and contractual additions, but the structure usually mirrors HMRC's recommended payslip layout: a payments block, a deductions block, a year-to-date column, and a net pay summary.

Common employers in this occupation include JD Wetherspoon, Mitchells & Butlers, Stonegate Group. Each employer runs payroll slightly differently, but the underlying PAYE computation against tax code 1257L and Class 1 National Insurance is identical across the UK (excluding Scotland for income tax). The biggest variability between two bar staff payslips at the same gross will be in the additions block: Bar staff see hourly basic, late-night premium where contracted, and tronc. Cash-handling float discrepancies must not be deducted from wages without written agreement.

Year-to-date columns are critical to verify on this role because the additions and salary sacrifice items change month to month. If your YTD gross divided by months elapsed in the tax year does not match your expected annual run-rate, that is the single best signal that something is mis-coded.

Tips, gratuities, service charges and troncs and bar staff pay

Bar tips arrive by two routes with two different answers. Coins dropped in the jar are worker-received tips that stay outside the Act unless your employer controls how they are shared, while card tips added at the terminal are employer-received from the moment they land. If you are supplied through an agency, the bar still has to weigh you in the allocation. Gov.uk's example of a bar that ignores its agency worker says a tribunal would probably find that unlawful. The money then reaches you through the agency, which must pass it on without unauthorised deductions.

Deductions from wages, and the retail 10% cap and bar staff pay

Section 17(1) carries a second limb that bar work meets more often than the first. A stock deficiency means a stock deficiency arising in the course of retail transactions, so a wet stock count that comes up short on spirits or kegs sits inside sections 17 to 22 just as a till variance does. It matters that the two limbs are not capped separately: section 18(1) holds the aggregate of everything taken on a pay day to one tenth, so a cash gap and a stock gap in the same month share that tenth between them.
